The 2015 vintage in Coonawarra was the earliest on record. An ideal growing season of slightly above average temperatures and dry conditions produced outstanding red wines with great colour and fine tannins.
A parcel of this wine was matured in a combination of French and American oak before undergoing the Charmat process to infuse the sparkle.
Concentrated dark cherry, plum and raspberry notes with hints of chocolate and spice. Juicy, ripe blackberry and plum enhanced by subtle sweet spices and hints of dark chocolate. Creamy bubbles lead to soft tannins on the lingering finish.
Food Pairing Notes
Served chilled as a refreshing aperitif, with light meat dishes (such as Christmas ham and turkey) or as a cleansing finish with chocolate desserts.
